Ex-military looking at EE

I am looking at starting my education post military and am considering EE. Not sure how feasible it will be due to my work schedule and family life.

A little about myself: I got out of the Navy last year (14 years). I was a SPY radar technician and worked with advanced signal processors, phased array multi-functional radars. I have a great understanding of the radar and what it can do. Currently I work for Mantech International as a System Engineer mainly testing and analyzing software for upcoming fleet updates.

Questions I have:
1. Due to my work and family schedule, how hard would it be to earn an online degree? (I am located in northern VA with no college reasonably close, George Mason would be the closest at around 2 hours away)

2.What fields are available that can relate to my past experience (radars)?
3.What colleges are recommended for online?

These are my main concerns and any information would be appreciated. Thanks in advance.

Will this DC-DC converter be good enough for a guitar pedal PSU?

Mornsun H1212LT-2W datasheet

I want to build an isolated power supply for a bunch of guitar pedals. My idea is to take an off-the-shelf power supply capable of providing 12v-18v at a few amps, then use a DC to DC converter for each pedal, in order to isolate them from each other. Most pedals do require 9v, so I will add another regulator before the output.

My main goal is to have the pedals isolated from each other to prevent ground loops and hum. I probably need isolation up to 50/60Hz as well, but I am unsure how important isolation at higher frequencies is.
